An old cheese dairy became a large distillery - the owner shows the new building

Five gables with large windows can be seen rising into the air as one drives from Affeltrangen in the direction of Strohwilen. It is a brand-new complex that appears on the horizon. Molding in colorful autumn tones adorns the façade - in the middle of it all, an old cheese dairy that was renovated in the course of the new construction. The Macardo Swiss Distillery has been properly upgraded. The owner of the distillery is Andy Bössow, who has lived with his family in Dubai for the past 15 years. "Distilling has always been my passion and hobby. When my wife met me, she wondered about my unusual bedtime reading," Bössow says at the opening of the distillery on Tuesday afternoon, grinning. One day, he says, a friend wrote to him in Dubai and pointed out that there was a small distillery for sale in Strohwilen. "During our vacations in Switzerland, we took a look at it once and bought it without further ado." But it was not to remain with the old cheese dairy. A year ago, the foundation stone was laid for the new building, and today the distillery shines in new splendor. With the most sustainable distillery in Switzerland, Macardo is a pioneer in the industry. "We work with regional ingredients, have solar energy and geothermal energy, and everything that is excreted becomes biogas," the owner proudly tells us. In addition, he says, the distillery benefits from its own water source, which is used to cool the boilers. "In the past, every cheese dairy had its own source. We're lucky there now." The old cheese dairy, built in 1904, now houses two stills that master distiller Bartholomäus Fink works on. "He's our master distiller." Fink fires the stills with a wood stove using wood from local forests. In the modern barrel cellar, each barrel is individually hung on the wall. "There's a counter on each fixture that sends a data transmission once a day to see how much product has escaped the barrel," Andy Bössow explains. Ten hotel rooms, two apartments, a walk-in store and the Honesty Bar round out the distillery. "We want to offer an experience. Tours can be booked with us or you can just relax in the countryside for once." Augustin Mettler, president of the "Swiss Distillers," is also enthusiastic: "The Macardo Swiss Distillery indicates a direction in which our industry could go in the future." As of November 28, the Distillery will open with B&B.
