Experienced fine distilleries, like Strohwilen-based Macardo, use mature, top-quality dessert fruit for the production of first-rate “Vieilles” and fruit brandies. The dessert fruit is fermented slowly and carefully and distilled in small batches – at Macardo, traditionally over a wood fire – in a process that goes back generations.
While most distilleries store their fruit brandies in steel tanks, Macardo opts for used Macardo whisky casks to age and refine its fruit brandies. Dried fruits of the respective same fruit type are also added to the aging distillate. Macardo’s “Vieilles” and fruit brandies thereby absorb exquisite flavors from the cask and dried fruits, which lends them their unique, unparalleled aroma.
